Meal Plan Week 22

Alright, here goes.  I really struggled in the kitchen last week.  Throwing together whatever I could find last-minute.  We didn't starve, but we didn't rave either.

This week I am challenging myself to try two new recipes ... wish me luck!

Sunday - Chicken Tortilla Soup
I always add black beans and use the already chopped celery/onion/carrot mix from Trader Joe's.

Monday - Pot Roast with sweet potatoes & brussel sprouts
This is a NEW one for me, thanks to Missy - she's fearless at the meat counter, and I am hoping some of her confidence / expertise wore off on me when she was here earlier this month :)

Tuesday - Leftovers
Figure the roast will make plenty and I know there will be extra soup, so I am taking the night off :)

Wednesday - Crispy Rosemary Chicken & Green Beans
Another NEW one, thanks to the Organizing Junkie.  I've never cooked chicken thighs, so this is a real stretch for me ... but it looks delicious!

Thursday - Pizza from Papa Murphy's - yummy
CPV picks it up on his way home from work :)

Friday - Baked Fish & Mac-N-Cheese & Peas

Saturday - Mini Meatloaves & Mashed Potatoes & Corn
I've been meaning to do this recipe for a few weeks now ...

I must get back into the meal plan habit. Things are going downhill quickly over here!

How did the crispy chicken turn out?
Here is what we had last week
M: spaghetti and meatballs
T: kielbasa and fries
W: Kraft foods chicken potpie
Th: leftovers
F: Pizza

This week, I'm working on it right now...(hitting the grocery store after the kids are in bed so it may change even more depending on sales)
M: chicken, bacon and onion in white sauce over pasta
T: some kind of meat - pork roast?
W: Italian pie (new recipe from my mom - I'll let you know how it turns out)
TH: tacos
