meal planning ... again

it appears meal planning is a weekly endeavor.  however I hate it a little less today because last week was a success!  no five o'clock scramble.  no random trips to the market.  less stress and good meals.

so I am at it again ... whether i like it or not.

Here are the four meals I will make at some point this week ...
  1. Pecan Encrusted Salmon, wild rice, and veggies
  2. Chicken Tortilla Soup - I always add black beans and use the already chopped celery/onion/carrot mix from Trader Joe's.
  3. Fuss-Free Ravioli and Cheese Bake
  4. Sloppy Joes & Sweet Potato Fries (Chitown Momma's recipe)
  • Brown 1 lb beef, season as you like (s&p, garlic powder)
  • 1/2 c ketchup
  • onion - I buy it in the frozen food section!
  • 1 tsp sugar
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp mustard
  • 1 Tbsp vinegar
  • I add grated carrots and red peppers to sneak in some veggies!
It can be ready to eat as soon as you feel the ingredients are pretty mixed up (if you are in a hurry), but it does taste a bit better if it sits and simmers on low heat for a while (30-60min on stove or hours in a crock pot)

Baking ...
I have bananas to use, so I am trying Banana Muffins with Butterscotch Chips
and because I adore Nutella, I want to try this recipe for Self-frosting Pumpkin Nutella Muffins!

Meal Plan ...

I really suck at this ... but I am trying!

Here's what the Vs x 4 will be dining on this week ... if all goes well ...

Sunday - Marvelous Mini Meatloaves, Mashed Tators, and Corn

Monday - Pizza (possibly frozen or take-and-bake)
Going with a no-fuss dinner on a Monday night because ... I have plans to attend an MNI/Cookie Exchange!

Tuesday - Updated Chicken Pot Pie
Making two: one for my family and one for my bed-resting with a preschooler friend Kelly.  This has long been my go-to recipe for taking to new mamas or bed-resting mamas.  It's easy and delicious and the younger crowd (aka the big brother/sister) usually gobbles it up, too!  Side note: I modify this recipe to exclude the Velveeta (I am not a fan) and substitute cream cheese instead.

Wednesday - Pecan-encrusted Salmon, Rice, and Veggies

Thursday - Sloppy Joes & Sweet Potato Fries
Going to give Chitown Momma's recipe a try ...
  • Brown 1 lb beef, season as you like (s&p, garlic powder)
  • 1/2 c ketchup
  • onion - as much or as little as you like or omit if you don't have one
  • 1 tsp sugar
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp mustard
  • 1 Tbsp vinegar
It can be ready to eat as soon as you feel the ingredients are pretty mixed up (if you are in a hurry), but it does taste a bit better if it sits and simmers on low heat for a while (30-60min on stove or hours in a crock pot)

Friday -  Grilled Cheese & Soup
It's date night (finally) and I want to save room for whatever yumminess our hostess is serving!

Saturday - White Chili - a recipe from my Aunt Sheila
  • 1 T. oil
  • 4 boneless skinless chicken breast havles, cubed
  • 3/4 C. onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14.5 oz) chichken broth, divided
  • 2 tsp. cornstarch
  • 3 cans (15 oz) cannellini beans, rinsed and drained
  • 2 cans (4.5 oz) green chiles
  • 1 1/2 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1 pkg. shredded cheddar cheese (optional)
  • 1 sm. container sour cream (optional)
  • 1 bag of tortilla chips (optional)
  1. Heat oil in a heavy 4 qt sauce pan over med high heat.
  2. Add chicken; cook for 2 or 3 minutes. add onion and garlic;
  3. Cook for 2 minutes. in sm. bowl, combine 1/4 cup of the broth with corn starch. add to chicken mixture along with remaining broth, beans, chilies, and seasonings. cover and bring to boil.
Uncover, reduce heat, and simmer for 15 minutes.
  4. Ladle into serving bowls. Top with cheese and sour cream.
  5. Serve with tortillias chips.

Is it possible that I haven't meal planned since the end of April?  That's just pathetic!  I know I can do better!  I will do better!  Starting this week.  Oh, geez, wish me luck!

Sunday - Pecan-encrusted Salmon, Rice, and Veggies
Monday - Chicken Quesadillas with Guacamole
Tuesday - Sausage & Potato Soup
Wednesday - Chicken, Almonds, Broccoli, and Rice

Special Breakfast - Mini Frattata

Baking from Scratch
1. M&M Cookies (Sunday)
2. Amish Friendship Bread (Wednesday)
This week I am trying a chocolate variation: Omit cinnamon and vanilla pudding from the basic recipe and add 1 large box of instant chocolate pudding, 3 tsp. cocoa and 3/4 cup chocolate chips. Bake for 1-1/2 to 1-3/4 hours.

Meal Plan Week 23

Well, it's birthday week here ... the man of the house is officially another year older on Thursday! As part of that celebration, I am doing my best to gear the meals toward his favorites.  I am also sharing a cherry cheese cake recipe that is really simple and yummy - and looks just delightful with candles on top ;)

Monday -  Baked Mac-n-Cheese Casserole

Tuesday - Harvarti Burgers & Baked French Fries

Wednesday - Brinner

Thursday - Enchiladas

Friday - Leftovers

Chad's Favorite Cherry Cheesecake Recipe
1 - 8 ounce package of cream cheese
1 can of cherry pie filling
1 graham cracker crust (I buy the pre-made, extra two slices variety)
1 small container of Cool Whip
1/2 cup sugar
1 tsp. vanilla extract
1 tsp. almond extract

Soften cream cheese.  Beat together sugar, cheese, and vanilla.
Fold in Cool Whip. Pour mixture into the graham cracker crust.
Add almond extract to cherries and pour over the top.

Place in refrigerator for 4 hours before serving.

Meal Plan Week 22

Alright, here goes.  I really struggled in the kitchen last week.  Throwing together whatever I could find last-minute.  We didn't starve, but we didn't rave either.

This week I am challenging myself to try two new recipes ... wish me luck!

Sunday - Chicken Tortilla Soup
I always add black beans and use the already chopped celery/onion/carrot mix from Trader Joe's.

Monday - Pot Roast with sweet potatoes & brussel sprouts
This is a NEW one for me, thanks to Missy - she's fearless at the meat counter, and I am hoping some of her confidence / expertise wore off on me when she was here earlier this month :)

Tuesday - Leftovers
Figure the roast will make plenty and I know there will be extra soup, so I am taking the night off :)

Wednesday - Crispy Rosemary Chicken & Green Beans
Another NEW one, thanks to the Organizing Junkie.  I've never cooked chicken thighs, so this is a real stretch for me ... but it looks delicious!

Thursday - Pizza from Papa Murphy's - yummy
CPV picks it up on his way home from work :)

Friday - Baked Fish & Mac-N-Cheese & Peas

Saturday - Mini Meatloaves & Mashed Potatoes & Corn
I've been meaning to do this recipe for a few weeks now ...

Meal Plan - Week 20

I am depending completely on KraftFoods.com for my meal plan this week ... I was just in the mood for "one-stop" recipe gathering. The Chicken Tetrazinni is the only one I haven't tried; all the others are oldies-but-goodies ... and I have all but four ingredients on-hand already.

Sunday - Tacos Extraordinaire

Monday - Tuna Cakes

Tuesday - Easy Chicken Tetrazzini

Wednesday - Marvelous Mini Meatloaves

Thursday - Leftovers

Friday - Baked Mac-n-Cheese

Saturday - Brinner

And this week ...
Sunday - Tacos with special shells
Monday - Beef Brisket Sanwiches
Tuesday - Baked Fish, Baked Mac-n-Cheese, and Peas
Wednesday - Cheese Tortellini and Tomato Sauce
Thursday - Pizza from Papa Murphy's
Friday - Leftovers

Meal Plan - Week 18

Yep, I fell off the meal plan bandwagon ... for a good long while.  Really, it's more like I was pushed off.  I haven't posted a meal plan since the end of October. But I think I have good excuses ... dozens of doctor's appointments in the month of November ... gave birth at the beginning of December ... and had meals provided for my family throughout the month of January.  But here it is February, and I'm out of excuses.  It's time to put dinner on the table ... on a more regular basis.

And here's what I've got for this week ...

Sunday - Brinner

Tuesday -Beef Brisket, Mashed Taters, Green Beans
I'm pulling the brisket from the freezer thanks to my awesome MIL, who cooked when she was here in December.

Wednesday - Lasagna

Thursday - Reames Chicken Noodle Soup
The recipe is on the back of the package.  My mom made it recently and had good things to say about it.

Friday - BLTA Wraps
Bacon, Lettuce, Tomato, and Avocado ... yumm-Y

Saturday - Leftovers or Jimmy Johns

Baking from Scratch - Applesauce Carrot Cake
This is a new goal of mine, and something I am hoping to do with NHV.   Last week we watched an episode of Super Readers that featured Super Why baking this recipe as a birthday cake for this little sister.

Meal Plan - Week 17

Last week's spotlight dish: Chicken Tortilla Soup II

I added a can of black beans because ... well, I like black beans and it upped the protein content.  This soup was so yummy!  We had it for dinner on Tuesday, a lunch potluck on Wednesday, and again for lunch on Thursday and Friday ... keep in mind I don't usually like leftovers!  I am tempted to make this soup again this week!

After seeing the non-sale price of ham at my local grocery store, the baked ham idea was a no-go.  I did make pork chops one night and even attempted to make my mom's famous gravy ... that was also a no-go!

----------------------------------------------------------------
And the (tentative) meal plan for week 17 ...

Sunday - Late Lunch followed by snacks and helpy-selfy
We had Jimmy John's sandwiches at 2:00, took a nap, and then snacked through the evening.

Monday - Ground Beef Enchiladas
Avocados have been so cheap this past week, and I have three to use before they go bad!

I've made this one many times.  It's hearty and yummy and easy to prep.

Again, this is a stand-by.  Can't wait to try out my "new" crock pot with this recipe.

Thursday - Dinner from Friends
This is such a treat!  I have a group of friends providing dinners for us every Thursday through the rest of my pregnancy.  What a blessing.

Friday - Pasta and Sausage

You've Gotta Try This ...

My meal plan this week is fairly uninspired ... admittedly.  However, I stumbled upon a recipe for Chicken Tortilla soup that is worth mentioning and recommending.  It was easy and scrumptious!

A few notes from the kitchen:
  • Based on a review of the recipe, I skipped the "saute" step, poached the chicken in 4 cups of chicken broth, and just dumped everything in my new super fabulous ($1) crock pot.
  • I did find that the amount of broth listed in the recipe is twice as much as I needed.
  • I added a can of black beans because I like them and appreciate the added protein.

Meal Plan - Week 16

Last week's spotlight dish: Slow-Cooker Hearty Beef Chili
I added a can of Bush's Baked Beans and a big squirt of barbecue sauce.  This was a tasty chili!  And the $1 garage sale Crock Pot ... did not disappoint; it works great and cleans up easily :)

----------------------------------------------------------------
Adorable NHV story:  As we were sitting down to dinner, my hubby told Natalie that we were having chili for dinner.  After a brief pause, I heard Natalie ask, "Mommy maked cold fur dee-ner?"  How's that for synonyms from a two year old?!

----------------------------------------------------------------

And the (tentative) meal plan for week 16 ...

Sunday - Leftovers: Pizza, Potstickers, & Salad
Not a very creative way to start the week, but we'll survive :)

This one earned high-praise a few weeks ago.  I had planned to make it last week but didn't get around to it, so it's back on the menu this week.

I love the Chicken Tortilla Soup at our local Red Robin restaurant.  I did a search to find one like it, and hope it's close.

Thanks to Chitown Momma, I am going to give this a try ... I'm a little apprehensive, but I know she's just a phone call away if I need help!

Thursday - CPV's Favorite Tacos

Friday - Ham-n-Cheese Pie
According to Chitown Momma, this is the perfect way to use all those ham leftovers (after ham sandwiches for lunch).

Meal Plan - Weeks 13, 14, & 15

As elevators don't stop on the 13th floor, I intentionally skipped the week 13 meal plan.  Call me superstitious.  Call me lazy and looking for an excuse.  Just when I was hitting my stride with meal planning, I jumped ship! We did manage to eat, but I hated scrounging something up last minute.

Last week - week 14 - I failed to meal plan again. But I have a great excuse! My mom was here visiting from IL, and she did ALL the cooking! It was awesome and relaxing and delicious! The highlight of the week was my Mom's famous beef and noodles, a simple combination of onions, mushrooms, stew meat, and Ramen noodles. I love it, and I have two big containers in the freezer!

I am trying to get back on track with week 15. Too bad I am feeling so very uninspired, but I won't give up.  I will pull together a menu to get us through the week. In the spotlight: a new oval, stainless steel crock pot - with removable crock - I found at a yard sale for $1.

Found this one thanks to the Organizing Junkie, and it's become a favorite cool weather soup.  It's easy, hearty, and delicious.

Sunday - Sausage Potato Soup Leftovers & Grilled Havarti Sandwiches

This one earned high-praise a few weeks ago.  It sounds warm and yummy on a cloudy day.

Tuesday - Helpy-Selfy & Leftovers
I have dinner plans, so the hubs and baby girl are on their own!

This one has been on my plan several times, but I haven't actually made it yet.  Let's try it again this week!  I've also got potatoes to use before they go bad, and I think a big yummy salad would taste great, too.

And I'll probably serve with hot dogs.

Friday - Leftovers
Seems like there will be plenty to choose from ... plus I have beef and noodles in the freezer.

Meal Plan - Week 12

Woo Hoo! I've hit the DOZEN mark! How exciting is that?!

Before I get to this week's meal plan, I have to rant-and-rave about a new recipe from last week's meal plan. The Fuss Free Ravioli and Cheese Bake was delicious and very, very, very EASY. My appreciative husband said, "This may be a recipe of the year contender." Wow! That's high praise! The recipe - with just 6 ingredients - boasts a prep time of 5 minutes ... and I must say, that's pretty accurate. You dump everything in the pan - no slicing or dicing (the vain of my cooking existence) required - and stick in the oven and walk away. The only change I made was to toss in a handful of diced kielbasa leftover from the Sausage Potato Soup - another praise-winning in last week's meal plan.

This was slated for last Wednesday, but we had an out-of-town guest who took us out for dinner that night :) And did I mention that this recipe was delicious?!

Monday - Beef Brisket, Mashed Potatoes, and Fresh Green Beans

This was pushed forward from last week's meal plan. Can't wait to taste the last of the brisket my MIL cooked when she visited about a month ago ... yummy!

Found this in my latest Kraft Food & Family magazine*, and it looks ... easy and delicious ... perhaps it will be my fuss-free recipe of the week :)

Wednesday - Leftovers & Gram's Best Brown Sugar Cake

Keeping the cooking simple so I can bake this cake ... it was calling to me from the pages of the magazine ... what's a pregnant lady to do? When the cake calls, I answer!

Thursday - Pizza and Mixed Greens & Pear Salad

This is Survivor night, and we usually do a simple dinner to make sure everything is cleaned up and we are sitting in front of the TV as the theme music rolls! The salad recipe will be perfect for using some of the pecans and apple-pears I got at the store.

Saturday - Date Night - Woo Hoo!

Looks like a yummy week ... better get to the store tomorrow while daddy is home to watch the toddler!

Meal Plan - Week 11

Well, here I am at Week 11 of Meal Planning with the Organizing Junkie. I must admit when I started, I thought I'd be lucky to keep it up for more than a week or two. But it really does make a huge difference in my stress level.

Last week's Mission Impossible - use up all the food in the freezer/pantry - was a success, but it was harder than having a structured meal plan. I struggled a few nights to find ingredients that could be pulled together into a meal. But no one went hungry, and I did meet my goal. Can't wait to get a good list and head for the grocery store ... that is totally an exaggeration, but you get the point :)

Here's the plan for this week ...

Monday - Brinner

I know we have this one more often than I'd like. But the truth is I have two doctor appointments today, and hubby offered to cook. Yep, breakfast for dinner it is!

We are having a guest from out-of-town. This is always a crowd pleaser and easy to prep ahead of time. And I have salmon in the freezer; one less item to buy at the store.

This one is delicious and seriously fuss-free!

Just found this recipe on the Organizing Junkie's meal plan for the week. Checked the weather forecast, and it's calling for soup day on Friday. Perfect combination!

Saturday - Pizza Party

Sunday - Beef Brisket, Mashed Potatoes, and Fresh Green Beans

Thanks to my MIL, I still have one more dinner's worth of brisket in the freezer.

Meal Plan - Week 10

I am on a Meal Plan Mission ... and hoping it's not an impossible one! I chose to accept this one. Heck, I came up with it myself. If I can continue to meal plan - for 10 straight weeks - and try at least a dozen new recipes in that time period, I can do anything!

My mission is base my entire meal plan this week on ingredients that I already have. The freezer is overflowing. The pantry is stocked. I don't need to bring anymore food into this house. I need to get creative and get frugal and make it happen!

The plan itself is going to look a little sketchy ... because there are things in that freezer that I haven't even unearthed yet ...
  • Leftover Beef Brisket (mashed potatoes, carrots from the freezer)
  • Hamburgers on the Grill (frozen veggies, can of baked beans, sweet potato fries)
  • Homemade Chicken Pot Pie (2 for Mommy Friends who recently had babies, 1 of Us)
  • Turkey Meatballs, Pasta
  • Beef Keilbasa, Herb Rice, Broccoli

Oh, and I made a homemade cobbler yesterday with fresh blueberries ... all from scratch ... all from ingredients I had on had ... except the vanilla ice cream :)

Meal Plan - Week 9

I can't fall off the Meal Plan Bandwagon now ... after 9 weeks, it's almost a habit :)

Sunday - Tacos with fresh avocado

Monday - Sausage, Spinach, and Gnocchi
With all the contractions last week, this just didn't happen ... but I am not giving up the dream!

Tuesday - Missy's Salmon Recipe
More details to come ... once her husband emails the recipe :)

Wednesday - BLTA Wraps
Yep, the Bacon craving continues and for this dinner I'll throw in some Lettuce, Tomato, and Avocado!

Thursday - Tuna Cakes
I make this a few weeks back, and it just sounds so good to me ...

Friday - Dinner Out
Perhaps at this darling Greek restaurant in town

Saturday - Stir-Fry with Toasted Seasame Dressing

Sunday, August 23, 2009

Meal Plan - Week 8

Hip, hip hooray ... it's that time again ... time to plan what delicious meals I'll be shopping for, preparing, eating, sharing with my family, and cleaning up in the next week. Okay, that last part is totally not true. I won't be cleaning up the mess after mealtime because my awesome husband does that. We have an "I cook, you clean" philosophy that is really and truly delightful. Honestly, it's the only way I cook, and I feel blessed to have a husband who complies agrees :)

Oh, and my wonderful MIL will be cooking one night. So really, I have it pretty easy, just the way I like it!

Anyway, let's get to the good stuff. And I do mean good stuff because - thanks to my friend Tammy, who apparently keeps magazines for much longer than I do - I have two new recipes to try from the March 2007 Real Simple magazine.

Sunday - Date Night at my MIL's insistence

And really who am I to argue with that?
Just have to figure out which restaurant to try ... perhaps that fabulous little Greek place downtown ... you know how I love the Soulvaki!

Monday - My MIL's Famous Beef Brisket

I am not sure if I have permission to post this recipe. I'll check and get back to you. This is an absolute favorite meal of mine ... except when she served it for Christmas dinner when I was newly pregnant with NHV and had a strong aversion to beef.

This is one of those Real Simple recipes I mentioned. I have a ton of spinach to use up, and there's something about a potato dumpling that has my tummy all-a-twitter ... it's probably a pregnancy thing :)

Wednesday - Hamburgers on the Grill, Fresh Veggies, & Mac-n-Cheese

I am going for an old standard here ... especially since I am trying two new recipes this week.

Thursday - Final Evening Concert at the Park ... and Picnic

Can it really be the end of August already?! Ugh! Haven't decided what I'll pack ... but I think I am over the KFC thing, so we'll have to try something different ... Jimmy John's perhaps? :)

Second Real Simple recipe, and the photo alone has my mouthwatering ... I really hope this one is as good and simple as it looks!

Saturday - Leftovers / Helpy-Selfy
Be sure to check out other delightful meal plans at the Organizing Junkie.

Meal Plan - Week 7

So last week was a bit of a "wash" from a meal planning perspective ... I have two recipes on this week's plan from last week's plan.

Sunday - Leftover Chipotle
Guess what Natalie and I had for lunch today :)

Monday - Fuss-free Ravioli and Cheese Bake
Thanks to the Organizing Junkie, I am going to give this recipe a try ... and hope it's plenty filling for my hubby just returning from a Mt. Rainier Summit :)

Tuesday - Jack's Ranch Chicken
I've been looking for a new chicken recipe, and this one includes bacon ... still craving bacon at this point in my pregnancy. Yummo!

Wednesday - Easy Tacos
This is always a good stand-by and a crowd-pleaser, a good combination when feeding another out-of-town guest :)

Thursday - Concert in the Park Picnic

It may be time for KFC fried chicken again!

Friday - Mexican Fiesta
CPV and I are enjoying a date night - with a big group of friends - while Mimi babysits ... can't wait!

Saturday - Beef Brisket
I am hoping I can talk my mother-in-law into making her famous and delicious recipe ... what a treat that would be! The leftovers will serve us nicely after she's gone, too!

To be honest, I am losing my gusto for meal planning, but I am proud that I've stuck with it for 7 weeks in a row now ... woo hoo!

Monday, August 10, 2009

Meal Plan - Week 6

Having company in town until Tuesday evening and looking at a busy week ahead, I am just not sure how this meal plan is going to pan out ... but here's what I am thinking ...

Monday - Homemade Lasagna, Salad, and Garlic Bread

Tuesday - Pizza Party

I've been looking for a new chicken recipe, and this one includes bacon ... still craving bacon at this point in my pregnancy. Yummo!

Thursday - Brinner (Breakfast for Dinner)
Thinking pancakes, hash browns, bacon, and eggs. Thinking YUM!

Thanks to the Organizing Junkie, I am going to give this recipe a try ... just in time to load my husband up on carbs before he leaves for a Mt. Rainier summit attempt this weekend.

Saturday - Family Picnic
I've volunteered to bring a veggie tray, but there's suppose to be all kinds of goodies!
