Meal Plan - Week 12

Woo Hoo! I've hit the DOZEN mark! How exciting is that?!


Before I get to this week's meal plan, I have to rant-and-rave about a new recipe from last week's meal plan. The Fuss Free Ravioli and Cheese Bake was delicious and very, very, very EASY. My appreciative husband said, "This may be a recipe of the year contender." Wow! That's high praise! The recipe - with just 6 ingredients - boasts a prep time of 5 minutes ... and I must say, that's pretty accurate. You dump everything in the pan - no slicing or dicing (the vain of my cooking existence) required - and stick in the oven and walk away. The only change I made was to toss in a handful of diced kielbasa leftover from the Sausage Potato Soup - another praise-winning in last week's meal plan.



This was slated for last Wednesday, but we had an out-of-town guest who took us out for dinner that night :) And did I mention that this recipe was delicious?!


Monday - Beef Brisket, Mashed Potatoes, and Fresh Green Beans

This was pushed forward from last week's meal plan. Can't wait to taste the last of the brisket my MIL cooked when she visited about a month ago ... yummy!



Found this in my latest Kraft Food & Family magazine*, and it looks ... easy and delicious ... perhaps it will be my fuss-free recipe of the week :)


Wednesday - Leftovers & Gram's Best Brown Sugar Cake

Keeping the cooking simple so I can bake this cake ... it was calling to me from the pages of the magazine ... what's a pregnant lady to do? When the cake calls, I answer!


Thursday - Pizza and Mixed Greens & Pear Salad

This is Survivor night, and we usually do a simple dinner to make sure everything is cleaned up and we are sitting in front of the TV as the theme music rolls! The salad recipe will be perfect for using some of the pecans and apple-pears I got at the store.




Saturday - Date Night - Woo Hoo!


Looks like a yummy week ... better get to the store tomorrow while daddy is home to watch the toddler!

Here is what our week is looking like...
Sun - burgers and fries (perfect football watching food!)
Mon - Chicken and brocoli rollups
Tues - Spaghetti and meatballs (a favorite of Benjamin's)
Wed - leftovers
Thurs - mini meatloaves are on our plan too! great minds...
Fri - pizza or something else from the freezer

We do a similar - dump and bake - with leftover pasta (I make an extra box and use it, or just cook up a box to make it - ANY KIND or the leftovers from old boxes), a jar of your favorite spaghetti sauce, a mix of your favorite cheese(s) to make about a cup, and those frozen meatballs (about a 1/3 of a bag thawed and cut in half or quarters.) I sometimes also add an extra can of diced tomato - if I have it. Or sprinkle a little extra Parm on top.

Bake at 375 for about 1/2 hour or until melty.
