Here I am again ... meal planning, feeling more organized, looking forward to my trip to the grocery store ... okay, that's a total exaggeration, but at least I am not full-on dreading it, and that's a step in the right direction :)
I am very excited that we have guests staying with us this week! All the way from VA (my old stomping grounds), my friend Heather, her husband, and two nuggets will be joining us here in the NW from Tuesday to the following Monday. This, of course, complicates my meal plan and makes me want to cling to old favorites rather than try anything new ...
Sunday - Supreme Pizza & Spinach Salad
Not sure if CPV will be home for dinner - he's off climbing rock somewhere - so we are keeping it simple tonight.
Monday - Brinner (aka Breakfast for Dinner) prepared by Chef Chad
This was Chad's request, and he said the words, "I'll even make it." Ummmm ... okay!
Tuesday - Creamy Pasta Primavera
Craving veggies, and this is a great recipe for lots of fresh veggies. I've made it before and use different ingredients every time. The original recipe needs some tweaking to give it a little zip.
Wednesday - Grilled Chicken Kabobs, Pasta Salad, Corn on the Cob
I can just picture all three kids hanging out in the backyard while the daddies kick back with a cold beer and grill up some meat. Heather and I will be inside - she'll be drinking a glass of wine and I'll be taking sniffs of it - putting together the sides. It's going to be a delightful way to kick-off our week together!
Thursday - Fried Chicken Picnic
File this under pregnancy craving. We'll be heading to our favorite outdoor park concert - swinging through the KFC drive-thru on the way. Two weeks ago at the concert, I saw a family enjoying a fried chicken picnic, and I haven't been able to stop thinking about it ... I must have a big bucket of greasy chicken and some cole slaw and a biscuit!
Friday - Whatever Delightfulness Heather Cooks Up :)
Heather is an awesome cook, and I can't wait to be treated to one of her yummy recipes!
Saturday - Dinner on the Road
We don't have a definite plan, which is driving me crazy, but we'll be heading to the North Cascades or Mount Rainier or the Coast. This will be an all-day (possibly overnight) adventure, so we'll plan to have dinner at a kid-friendly restaurant.

My plan for the week already got a bit jacked up so here is the modified version (a woman from my church brought over a lasgna on Sun - she was all worried about it being too late after Taylor's birth. I told her it is NEVER to late to bring a mom of 2 dinner that was already made. It was delicious too. She used the Barefoot Contessa turkey lasgna recipe! Yummo!!!
Sun: Lasagne
Mon: The chicken avacado wraps from Dana's previous meal plan - I did chicken and bacon! Excellent!
Tues: Chicken, bacon and carmelized onions in a white sauce over pasta
Wed: Enchillada Casserole
Thurs: church picnic
Fri: Leftovers
Sat: Eat out
And I know next week, but in the spirit of competition, I will wait to post that one...:)
